Job description

Head Chef - Country Pub Holywell, Flintshire, North Wales

We're looking for an experienced Head Chef, or ambitious Sous Chef ready to step up, to lead the kitchen at The Druid Inn, Gorsedd, near Holywell in Flintshire, North Wales.

For us, finding the right person is about more than an impressive CV.

We're looking for someone who cares about food, takes pride in their kitchen and enjoys being part of a pub. Someone who leads from the front, stays calm when the checks are flying in, communicates well and creates the sort of kitchen that people actually enjoy coming to work in.

You might already be an experienced Head Chef looking for your next home, or perhaps you're a strong Sous Chef who's ready to step up, lead your own team and put your stamp on a kitchen.

A little about The Druid Inn

Following a thoughtful and sympathetic refurbishment two years ago, The Druid Inn is everything we think a proper country pub should be.

Think roaring fires, characterful furniture, interesting pictures, cosy corners and soft lighting, all centred around a traditional bar stocked with interesting beers, wines and spirits.

Behind the scenes, the kitchen received just as much attention. It was completely redesigned and refurbished and now boasts a modern, fully induction kitchen.

Our food is freshly prepared on site and is predominantly traditional and British. We like recognisable dishes, cooked properly using fresh, quality produce - but there's plenty of room for creativity and a little flair.

We want our Head Chef to understand what makes great pub food great, while still getting excited about developing dishes, seasonal ingredients and keeping the menu interesting.

The person we're looking for

Personality matters to us.

You'll be enthusiastic, motivated and organised, but you'll also be approachable. You'll communicate well with your team, the front-of-house team and management, and understand that a successful kitchen and a successful pub have to work together.

You'll love the buzz of a busy service and have the confidence to take control when you need to, without feeling the need to shout your way through it.

You'll know your fresh food operation inside out and take pride in standards, consistency and presentation.

Just as importantly, you'll want to develop the people around you. We want someone who enjoys passing on their knowledge, mentoring junior chefs and building a kitchen team that works hard, learns and has a bit of fun along the way.

The role

You'll take responsibility for the day-to-day food operation at The Druid Inn, leading our full kitchen team and working closely with the General Manager, the wider pubs team and our Group Head Chef.

You'll be responsible for developing and mentoring junior chefs, producing rotas and ensuring HACCP documentation, procedures and food safety standards are consistently maintained.

Strong cost control and stock management skills are essential.

You'll also collaborate on new dishes and menu development and build good relationships with our suppliers, ensuring we're buying the best ingredients while achieving our GP targets.

Ultimately, we want you to treat the kitchen as if it were your own.

What you'll get in return

We're an independent, growing and family-run pub company headed by Jerry Brunning, the original founder of Brunning & Price.

We want good people to stay with us, develop and enjoy what they do. In return, you'll receive:

A competitive salary based on your experience
Quarterly bonus/profit share
Equal share of weekly cash tips
48-hour weekly contract worked over 4 or 5 days
Paid overtime
Laundered chef whites provided
Pension scheme
28 days' annual holiday
Holiday purchase scheme
Free meals on duty
Pubs Limited food and drink discount scheme
Internal and external training courses to further your professional development
Excellent social outings and gatherings
Company events
Free on-site parking

Due to our rural location and the lack of public transport, a driving licence is essential.

Who are Pubs Limited?

We're a family-run independent pub company led by Jerry Brunning, original founder of the Brunning & Price pub company.

Our family includes:

The Swan - Marbury, Cheshire
The Black Bear - Whitchurch, Shropshire
The Hare - Farndon, Cheshire
The Druid Inn - Flintshire
Basement 85 - Chester

We believe pubs should have character, individuality and personality - and we think the same should be true of the people who run them.

So, if you're a chef who loves fresh food, enjoys leading people and gets a genuine kick out of a busy pub, we'd love to hear from you.

Send us your CV and come and have a chat.
