Job description

About the Position


Season's Restaurant is seeking an experienced Grill Cook to join our culinary team. We are an upscale, scratch kitchen committed to using fresh, quality ingredients and delivering consistently excellent food and service to our guests.


The ideal candidate has a strong foundation in professional cooking, takes pride in their work, and understands the importance of quality, consistency, organization, sanitation, and teamwork in a professional kitchen.


This is a PM position, approximately 1:00 PM-9:00 PM , with responsibilities focused primarily on grill station execution, protein preparation, service, and station organization.


Minimum 3 years of professional restaurant experience required. Experience in an independent, scratch-kitchen environment is strongly preferred. QSR experience alone will not be considered.


Responsibilities


Prepare and execute the grill station during dinner service according to Season's standards.
Complete daily prep and production according to prep sheets, recipes, and established pars.
Clean, trim, portion, and properly store beef, chicken, pork, fish, and other proteins according to established specifications.
Maintain consistent portion sizes while minimizing waste.
Properly season, grill, sear, cook, rest, and finish proteins to order.
Maintain consistent quality, temperature, presentation, and execution throughout service.
Communicate effectively with the kitchen team regarding product needs, timing, and service issues.
Maintain an organized, clean, and properly stocked station throughout the shift.
Follow all food safety, sanitation, storage, labeling, dating, and product rotation procedures.
Properly clean and maintain the grill, flat top, holding equipment, coolers, tools, and surrounding work areas.
Complete all required end-of-shift cleaning and closing procedures.
Assist with other kitchen duties and stations as needed.
Work efficiently and professionally during high-volume periods while maintaining quality and attention to detail.


Knowledge, Skills & Abilities


Strong working knowledge of professional cooking techniques, particularly grilling and cooking proteins.
Demonstrated knowledge of beef, chicken, pork, and fish fabrication, trimming, portioning, storage, and preparation .
Understanding of proper cooking temperatures and doneness for various proteins.
Ability to consistently execute dishes according to recipes, specifications, and plating standards.
Knowledge of proper food handling, cross-contamination prevention, temperature control, and sanitation practices.
Ability to recognize quality issues with food, including seasoning, doneness, appearance, texture, and freshness.
Ability to work from prep sheets and production pars and maintain adequate product levels for service.
Strong organizational skills and attention to detail.
Ability to keep a clean and sanitary work station throughout the shift.
Ability to communicate clearly and work effectively as part of a professional culinary team.
Dependable, punctual, accountable, and able to take direction.
Willingness to learn, accept feedback, and continue developing professionally.
Ability to work calmly and efficiently under pressure.
