Shieldaig Lodge is a beautiful loch front hotel with a friendly team and a Highland fine dining restaurant. We use only the best locally sourced produce from in and around the lodge, and all of the ingredients on our menu have been locally reared or caught, or grown in our own walled garden.
We are looking for a Chef de Partie who is looking to progress in their career, and work alongside our talented Executive Chef to develop their skills and experience as Chef de Partie, ready to take the next step with the potential of future progression within a well established company who promotes from within. This role also gives you a fantastic opportunity to work with local fresh ingredients to create tasteful foods from scratch.
Responsibilities
Prepare and cook dishes to the highest standards, ensuring consistency and presentation meet brand specifications
Oversee a designated section of the kitchen, including mise en place, cooking, and plating of menu items
Maintain cleanliness and organisation of your work station in accordance with food safety regulations
Assist in developing new menu items and improve existing recipes
Collaborate with team members to ensure smooth kitchen operations during service periods
Monitor stock levels and communicate with suppliers for ingredient replenishment as needed
Ensure all health and safety standards are adhered to at all times
Support junior kitchen staff through training and mentorship as required
Requirements
Proven experience in food preparation and cooking within a busy restaurant or hotel environment
Looking for progression and eager to advance in the role
Strong knowledge of culinary techniques and food safety standards
Excellent organisational skills with the ability to work efficiently under pressure
Good understanding of meal preparation processes and presentation standards
Previous experience working in a restaurant setting is highly desirable
Relevant culinary qualifications or certifications are preferred but not essential depending on experience
