Known and loved for our caf© roots, Byfords is transforming into a refined casual dining restaurant focused on quality-driven food, thoughtful service and internationally inspired flavours.
Our direction is clear: fewer dishes done exceptionally well. We are actively moving away from quantity-led dining and focusing instead on quality, creativity and consistency across every plate that leaves the kitchen.
Alongside this evolution, we are currently undertaking a major kitchen upgrade and redevelopment programe, with the full project scheduled for completion by January 2027. This is a fantastic opportunity to join the business during a pivotal stage of growth and help shape the future of the kitchen from the ground up.
We're now looking for a talented and ambitious Sous Chef to help lead that journey.
About the Kitchen
Our operation seats up to 120 covers and delivers three core services daily:
Brunch
Afternoon Tea
Dinner
Menus include:
Elevated brunch dishes including kedgeree, breakfast hashes and quality full English breakfasts
Internationally inspired small plates
Handmade pizzas
Refined main courses
House-made desserts
You'll join a core brigade of 10-12 chefs, supported by an additional production team of 6 specialist chefs who assist with:
Fresh bread production
Pastry items
Afternoon tea preparation
Gelato production
Base sauces
Oils and infused preparations
General prep support across services
This structure allows the service kitchen to focus on execution, consistency and delivering genuinely high-quality food during service.
What We're Looking For
We're searching for someone who:
Has strong experience within a fresh-food kitchen
Thrives in fast-paced, high-volume environments while maintaining quality
Can confidently lead and motivate a team
Has excellent organisation and communication skills
Brings creativity, consistency and attention to detail
Wants to contribute to a growing and ambitious food operation
Essential Qualifications
Minimum NVQ Level 2 in Professional Cookery/Food Preparation
Ideally NVQ Level 3 or equivalent professional kitchen experience
The Role
As Sous Chef, you'll work closely with the Head Chef and senior management team to:
Lead services across brunch, afternoon tea and dinner
Support menu development and seasonal changes
Maintain exceptional standards of food quality and presentation
Train and develop junior chefs
Help manage ordering, prep systems and kitchen organisation
Drive consistency, efficiency and professionalism throughout the kitchen
